Mom and Dad

My parents are the best. Yesterday, my mom ordered this as a gift for our new house. I am so excited!! I bet my father just read this and went, “We WHAT?” Don’t worry, it was on clearance for 60% off. Hell to the yes! They are coming over tomorrow evening for dinner. (After I invited them over, the geekboy reminded me that we no longer have a dining room table - he took it apart for the move. Oops.) I’m going to make that lemon/basil pasta that we love (thinking about adding shrimp to the recipe). For dessert, I’m going to make cupcakes, natch. I’ve been dreaming about creamsicle cupcakes. I am going to use my vanilla cake recipe and add some orange extract (I have some good stuff on order, but this will have to do for now). Vanilla frosting, perhaps with a touch of orange color? What do you think?

    In a coincidence we’ve already discussed, I am also making the lemon/basil pasta tomorrow for dinner because Jeremy’s dad is visiting us this weekend. He and his girlfriend will be here around 4:30 today. I’m not making dessert, though. I figured we’d buy something.

    I am drooling over creamsicle cupcakes! I must know how they turn out. I say yes to orange-coloured vanilla frosting.

    It’s fresh berry season up there, right? How about a pie and you could make some nice whipped cream?

    What do you think of some slivers of orange peel for decoration on the cupcakes? I’m really psyched…I hope it comes out the way I want it to. I think extra vanilla and the addition of the orange flavor should do it.

    I love the orange peel idea. If you want to go a step further, you could candy them. You just boil the little slivers in a syrup, ratio 1:1 water and sugar. If you want to make them super pretty, give each one a little mint leaf, too. #

    wouldn’t it be great if you could stick a popcicle stick on the bottom of your creamcicle cupcake so you can eat it like a … creamcicle. brilliant! oh Sandra, how drôle!

    My mom used to make cupcakes in a wafer ice-cream cone sometimes. That would be really cool, huh?

    We had the lemon/basil pasta for dinner on Monday night! (And lunch Tuesday…# I think it’s delicious. Sadly my husband is not as enamored of it as I am…he’s of the mindset that pasta needs a heavier sauce. But he’s British and likes mushy peas.. what does he know.
